400g self raising flour
pinch mixed spice
125g caster sugar
2 medium eggs
1 tsp golden syrup
Sift flour and spice into a mixing bowl.
Add the butter and lard and rub in with fingertips until mixture looks like breadcrumbs.
Mix in sugar and sultanas.
Crack eggs into a small bowl and beat, add to breadcrumb mixture, add syrup and mix well (if mixture appears a little dry add a drop of milk).
Roll out on lightly floured surface to about 1cm thickness, cut using a 2” cutter.
Grease a griddle or heavy based frying pan with lard and cook until nut brown and cooked through.
